Hawaiian Oatmeal is a hearty, creamy oatmeal filled with juicy bits of pineapple, chewy nuts, a sprinkling of coconut, and a dusting of brown sugar.

We are huge fans of oatmeal and there is no better way to start a fall day than with a fun bowl of oatmeal. My kids can make most of our oatmeal recipes on their own and I have to admit that it’s kind of awesome to be served a tasty meal in the morning while barely lifting my sleepy head out of my coffee cup.

I love playing with different flavors and add-ins for our oatmeals. My kids almost licked the pan clean after we ate this oatmeal for breakfast and I already promised them we’d use the rest of the pineapple for more Hawaiian Oatmeal tomorrow.

While stovetop oatmeal is probably our most frequently eaten oatmeal, we also love baked oatmeal and crock-pot oatmeal. I’m always experimenting with different combinations of add-ins for oatmeal.

Hawaiian Oatmeal

Ingredients

  • 2 cups old fashioned oats
  • 3 cups water
  • 1/2 teaspoon kosher salt
  • 1/3 cup sliced almonds or chopped pecans
  • 1/2 cup pineapple tidbits
  • Topping Ingredients:
  • 3 - 4 teaspoons light brown sugar optional
  • 1/4 cup pineapple tidbits
  • 1/4 cup sweetened coconut plain or toasted
  • 2 tablespoons sliced almonds or chopped pecans

Instructions

  • Combine the oats, water, salt, nuts, and pineapple in a medium-size saucepan over medium-high heat. Bring to a boil and then reduce to a simmer. Simmer for 3-5 minutes, until the oatmeal thickens. Scoop into serving bowls, sprinkle with sugar, and toppings as desired. Enjoy!
