I actually dreamed of this ice cream one night (doesn’t everyone dream about food?) after making a batch of Rice Krispies Treats . I woke up the next morning, and I was still thinking about it.
Rich and buttery sweet marshmallow squares with the perfect amount of crunchy chew, loaded into a luscious vanilla base? Before I knew it, I was chopping up the leftover treats into tiny morsels to add in to my next batch of ice cream.
Rice Krispie Ice Cream
I knew I was onto something. And, I’m happy to say that my imagination didn’t do rice krispy treat ice cream justice. It’s even better than I hoped it would be. I simply can not resist this ice cream when it is in the freezer. I made three batches of it in the first week, and my boys and I ate every single spoonful.
The contrast of textures is perfect for ice cream. The Rice Krispies soften just a bit, reducing crunch. And they give a wonderful chew to the frozen ice cream. I chopped mine up into pieces that were about the size of game dice. Anything larger, and I felt like they’d be hard to chew or be too big for a spoon.

Rice Krispy Treat Ice Cream
I don’t imagine that anyone who has found this recipe will need much convincing. As an adult, rice krispy treats don’t make it into the dessert rotation nearly often enough. I tend to avoid things that might give any small children visiting us sticky fingers.
But that’s the beauty of this rice krispy ice cream. It lets you enjoy the wonderful, chewy, marshmallow treat without worrying about the residue it’s going to leave everywhere that little hands can reach.

Ice Cream with Rice Krispies
I’m adding this variety of Rice Krispie ice cream to an ever-growing list of homemade ice cream flavors that I love to make at home. Sometimes, I think I may have a problem. But, it’s a delicious problem to have.

These are my favorite inexpensive containers for storing ice cream. They’re perfect for gifting (who doesn’t love homemade ice cream?) storage, re-using, etc. I write the flavors on the lids with a sharpie and it washes off with dish soap.
I have more ice cream scoops than I can keep track of at this point and I definitely play favorites. This ice cream scoop does the best job ever of cutting through firm ice cream and still delivers a pretty scoop. It gets bonus points for being one of the least expensive scoops I own as well.

Cereal Ice Creams
Among the many flavors I’ve developed over the years, I’ve found that cereal ice creams hold a special place in our hearts. Maybe it’s the nostalgia that makes them so good, but this rice krispies ice cream fits right in with the rest of these in the freezer.
I wasn’t a big fan of the cereal as a kid, but give me a big bowl full of this sweet vanilla ice cream filled with crunchy grape nuts. Grape nut ice cream is an absolute win among my family and friends.
I find that fragrant cinnamon spice is a perfect match for cool, velvety ice cream. And, you’ll find it positively irresistible, loaded with caramelized pieces of cereal in this Cinnamon Toast Crunch ice cream .
And, if you were the kind of kid who loved to drink sweet cereal milk (the flavored, colored milk after all the cereal is gone), then this Captain Crunch ice cream is for you. Cereal flavor infuses every scoop of creamy, velvety smooth ice cream. And, the same method is used to make Fruity Pebbles ice cream , too!

- ▢ 1½ cups heavy cream
- ▢ 1 cup milk
- ▢ ⅔ cups sugar
- ▢ ⅛ teaspoon fine sea salt
- ▢ 1 tablespoon vanilla extract or 1 vanilla bean, scraped
- ▢ 4 Rice Krispy Treats (about 3 cups worth, chopped very small)
Instructions
- Whisk together the cream, milk, sugar, salt, and vanilla. Pour into the ice cream maker and freeze according to the manufacturer’s directions. While the ice cream is churning, use a very sharp knife to slice the Rice Krispy Treats into very small 1/4″ – 1/2″ pieces.
- When the ice cream finishes churning, scoop the ice cream into a freezer-safe airtight container and stir in about 3 cups worth of the chopped up Rice Krispy Treats. Freeze until ready to serve.
